When you call the sushi restaurant to order dinner, you could ask them to deliver disposable chopsticks and paper napkins (and both regular soy sauce and gluten free soy sauce!) along with the food. I'm sure the restaurant won't provide dinnerware plates nor glasses nor silverware forks etcetera because their not a catering business.
