In the life-sciences area, especially about evolution, Carl Zimmer is a pro, with many books to his credit. (I loved Parasite Rex from a few years ago.) He often writes on a freelance basis for the New York Times. He sometimes writes for us at Scientific American as well. Well, they all do.
